Orange muffins


  • 1 egg
  • Raisins
  • Almond
  • Chia seeds to sprinkle
  • A pinch of cinnamon powder
  • A pinch of salt
  • A pinch of apple cider vinegar
  • 1/3 glass of milk
  • 1 table spoon yoghurt
  • 50gr butter
  • 1 tea spoon of Vanilla extract
  • 1 tea spoon of Baking powder
  • 1 table spoon Corn starch
  • 40 gr Wheat flour
  • 40gr Oatmeal flour
  • 1 Orange zest
  • 4 table spoon of maple syrup (or unsweetened apple sauce, or date puree)


  1. Preheat oven to 180C degrees.
  2. Add vinegar to the milk and set aside. The milk become sour and it will turn into pieces. Do not worry!
  3. Smash/mix/beat the butter.
  4. Add the egg and mix with butter until it is smooth.
  5. Add the vanilla extract and maple syrup.
  6. Add the wheat flour, oatmeal flour, corn starch, baking powder, pinch of salt, cinnamon mix.
  7. Add the milk mixture to the batter.
  8. Add the yoghurt.
  9. Mix raisins and almonds with a table spoon of flour until they are fully coated.
  10. Add orange zest, raisins and almonds to the batter.
  11. Sprinkle cinnamon and chia seeds on the top of the muffins.
  12. Bake 20 mins and check if it is baked by using a toothstick method. If it is still batter, bake it until it becomes solid.
