Easy-Peasy Ratatouille


  • Olive oil
  • 5 tomato
  • 1 zuccini
  • 1 red onion
  • 1 eggplant
  • 1 white onion
  • 2 carrots
  • Salt
  • Pepper
  • Dried herbs of choice


  • First prepare the tomato sauce for the base.
  • Add olive oil and chopped white onion to a pan. Cook until onions get golden.
  • Chop carrots and add to the pan.
  • While carrots are cooking, chop 3 big tomatoes and then add to the pan. Cook with a high temperature until the tomatoes releases its water and starts to boil. Then reduce the heat and cook the sauce slowly. Preferably an hour or more. The more you cook the more it becomes tasty.
  • Preheat the oven with 180 degrees.
  • In a glass ware, add the tomato sauce.
  • Slice the tomato, onion and zuccini to be round slices.
  • Add them in sequence and repeat until the rows are finished.
  • Add salt, pepper, and some dried herbs.
  • Put it into oven and bake until the tomatoes and vegetables are tender.
